Tuesday Tips & Tricks: Royal Icing Consistencies

The hardest part about Royal Icing is getting the perfect consistency. Even just a slight change can make a big difference! This quick video demonstrates the perfect consistency for outlining/flooding sections of your cookie. I use a single consistency method where I slowly pipe to outline and then press harder to flood all with the same consistency.

An easy way to create the perfect consistency is through timing how long it takes for a drizzle of icing to settle back into the rest of the icing. A 20-second icing, meaning it takes 20 secs for the icing to be back incorporated, is the consistency I try to hit for my main royal icing.

I will use a thicker icing for details, but this consistency is the best for the large sections.
