Last week, my boys took swimming lessons. They are both pretty nervous in the water, but made progress, and I was proud of them for sticking with it! To celebrate making it through the week and thank their very patient teacher, I made these adorable pool cookies. I saw a lot of similar types online; this sort of style became popular after the Barbie movie a few years ago.

These cookies use a couple of sugar cookie decorating techniques – one I’ve done before and one that was new for me. I always want to test techniques on cookies for my family or cookies I’m gifting. It’s a pefect opportunity to try something new with less pressure or expectations.

Ths first technique is the wet-on-wet icing. This is what I used to create the swirls in the water. You want to use two icing colors that are both at a medium consistency (I use the 20-second consistency). You pipe the second color on while the first is still wet so you can easily swirl the colors together with a cookie scribe.

I also used royal icing transfers. It’s a technique I haven’t done before but have been wanting to try. It’s creates a three-dimensional look to the cookie and allows you to create details that aren’t directly piped on the cookie. This gives you a better chance to fix it or perfect the details without distrubing the base icing of the cookie. Doing it this way also allows you to trace items. You simply place a printout of the design you want under parchment/wax paper and trace over it with icing.

Once the cookies and royal icing transfers were dry, I added some details to my pool floaties and then “glued” them on using thicker consistency white icing. I then piped a border and my pool cookies were complete!
